Not much has changed since yesterday, although I started re-playing Final Fantasy games to kill the tedium. I’m feeling better and more bouyant emotionally. Now, if only my body would cooperate that would be most awesome.
This morning, I planned out menus and grocery lists for the next 2 weeks. This week was pretty easy, since we’ve got plans every day from Monday through next Sunday–and for at least three of the days those plans including eating out.
Just in case you care (or don’t…which begs the question, “why are you reading this?”), here’s what we’ll actually be cooking this week and next:
Soy-Ginger Salmon with Napa Slaw
Eggplant Parmesan Lasagna
Ham and Cheese Turnovers with Romaine salad
Carmelized Leeks with Roasted Salmon Fillets
Bacon Maple Waffles
Honey Baked Ham (from the store, Honey Baked Ham) and maple spinach salad
mini ham and egg casseroles (with the leftover ham)
Maple-Mustard Broiled Steak and asparagus
Bacon and Leek Tart with endive and asiago salad
Beef and Cheddar pot pie and green beans
Chicken Kiev with an apple and pear salad.
